Description

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a blender, combine oats, cottage cheese, eggs, honey, and vanilla; blend until smooth.
  3. In a bowl, mix the baking powder and salt with the blended mixture.
  4. Gently fold in the blueberries.
  5. Pour the batter into the prepared muffin tin.
  6. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  7. Let cool before serving.
