- 1 cup oats
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- In a blender, combine oats, cottage cheese, eggs, honey, and vanilla; blend until smooth.
- In a bowl, mix the baking powder and salt with the blended mixture.
- Gently fold in the blueberries.
- Pour the batter into the prepared muffin tin.
- Bake for 20-25 minutes until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
These muffins can be stored in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. They freeze well for up to three months.
