Instructions

  1. Grate the sweet potatoes and place them in a clean kitchen towel. Squeeze out excess moisture.
  2. In a large bowl, combine the grated sweet potatoes, diced onion, olive oil, salt, pepper, and paprika. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add a bit more olive oil if necessary.
  4. Once hot, form the sweet potato mixture into patties and place them in the skillet without overcrowding.
  5. Cook for about 5-7 minutes on each side until golden and crispy.
  6. Remove from the skillet and keep warm while cooking the remaining patties.
  7. Serve hot, garnished with fresh parsley if desired.
