Ingredients

- 1 cup almond flour
- 1/2 cup natural peanut butter
- 1/4 cup sweetener (such as erythritol or coconut sugar)
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the almond flour, peanut butter, sweetener, egg, vanilla extract, baking soda, and salt in a mixing bowl.
- Stir until a dough forms.
- Scoop out the dough using a tablespoon and roll it into balls.
- Flatten each ball slightly with the back of a fork.
- Pop the baking sheet in the oven and bake for 10-12 minutes.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for about 5 days or freeze for up to 3 months.
