  • 0.5 tsp black pepper
  • 1 mango (diced)
  • 0.25 cup red onion (finely chopped)
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro (chopped)

Instructions

  1. Whisk together the honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper in a bowl to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Ensure it’s well coated and marinate in the fridge for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side, until golden brown and cooked through, reaching an internal temperature of 165°F.
  4. In a separate bowl, combine the diced mango, finely chopped red onion, lime juice, and chopped cilantro to prepare the mango salsa.
  5. Serve the cooked chicken topped with a generous scoop of mango salsa and enjoy!
