- 4 chicken breasts (boneless skinless)
- 3 tbsp honey
- 2 limes (zest and juice)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 mango (diced)
- 0.25 cup red onion (finely chopped)
- 1 tbsp lime juice
- 2 tbsp fresh cilantro (chopped)
Instructions
- Whisk together the honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper in a bowl to create the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Ensure it’s well coated and marinate in the fridge for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side, until golden brown and cooked through, reaching an internal temperature of 165°F.
- In a separate bowl, combine the diced mango, finely chopped red onion, lime juice, and chopped cilantro to prepare the mango salsa.
- Serve the cooked chicken topped with a generous scoop of mango salsa and enjoy!
Notes
For best results, marinate longer and use fresh ingredients. Avoid overcooking the chicken.
