- 2 ripe bananas
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat your oven to 375°F (190°C).
- Mash the ripe bananas in a bowl.
- Mix in the Greek yogurt, honey, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Combine the wet and dry ingredients by gently folding them together.
- If desired, fold in chocolate chips or nuts.
- Fill muffin cups about three-quarters full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
Serve warm with butter or Greek yogurt. Store in an airtight container in the fridge for up to five days.
