Ingredients

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas in a bowl.
  3. Mix in the Greek yogurt, honey, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine the wet and dry ingredients by gently folding them together.
  6. If desired, fold in chocolate chips or nuts.
  7. Fill muffin cups about three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.

Notes

Serve warm with butter or Greek yogurt. Store in an airtight container in the fridge for up to five days.
