Description

Delicious and nutritious brownies made with sweet potatoes, chocolate, and nut butter for a guilt-free treat.


Ingredients

  • 1 cup mashed sweet potato
  • 2 oz unsweetened dark baking chocolate
  • 1/4 cup creamy cashew butter or almond butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 egg yolk
  • 1 tsp pure vanilla extract
  • 1/3 cup cacao powder
  • 1 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp pink salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper or lightly grease it.
  2. Combine the mashed sweet potato and melted dark chocolate in a large mixing bowl.
  3. Add the creamy cashew butter (or almond butter), pure maple syrup, egg, egg yolk, and pure vanilla extract. Mix until smooth.
  4. Incorporate the cacao powder, coconut flour, baking soda, and pink salt. Stir until no dry streaks remain.
  5. Fold in the dark chocolate chips and chopped pecans or walnuts.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Bake for about 20-25 minutes, or until edges are firm and a toothpick inserted in the center comes out clean or with moist crumbs.
  8. Cool for 10-15 minutes before slicing and serving.

Notes

These brownies taste amazing and can be enjoyed plain, with powdered sugar, or topped with vanilla ice cream. Store leftovers in an airtight container.
