- 1 cup mashed sweet potato
- 2 oz unsweetened dark baking chocolate
- 1/4 cup creamy cashew butter or almond butter
- 1/4 cup pure maple syrup
- 1 egg
- 1 egg yolk
- 1 tsp pure vanilla extract
- 1/3 cup cacao powder
- 1 Tbsp coconut flour
- 1/2 tsp baking soda
- 1/8 tsp pink salt
- 1/2 cup dark chocolate chips
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper or lightly grease it.
- Combine the mashed sweet potato and melted dark chocolate in a large mixing bowl.
- Add the creamy cashew butter (or almond butter), pure maple syrup, egg, egg yolk, and pure vanilla extract. Mix until smooth.
- Incorporate the cacao powder, coconut flour, baking soda, and pink salt. Stir until no dry streaks remain.
- Fold in the dark chocolate chips and chopped pecans or walnuts.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for about 20-25 minutes, or until edges are firm and a toothpick inserted in the center comes out clean or with moist crumbs.
- Cool for 10-15 minutes before slicing and serving.
Notes
These brownies taste amazing and can be enjoyed plain, with powdered sugar, or topped with vanilla ice cream. Store leftovers in an airtight container.
