Description
A quick and wholesome meal featuring roasted chicken and sweet potatoes, perfect for any weeknight dinner.
Ingredients

- 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 2 medium sweet potatoes, peeled and cut into uniform 1-inch cubes
- 2 tbsp olive oil or avocado oil, for roasting
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 1 red onion, cut into wedges
- 2 cups fresh spinach or kale (added after cooking)
- 2 tbsp fresh lime juice (optional)
- 2 tbsp balsamic glaze (optional)
- 2 tbsp lemon-tahini dressing (optional)
- 2 tbsp maple-dijon vinaigrette (optional)
- Fresh parsley, for garnish
- Cilantro, for garnish
- Toasted sesame seeds, for garnish
- Chopped nuts, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
- Cut the sweet potatoes into 1-inch cubes, then toss them with olive oil and half of the seasoning blend. Spread them evenly on one baking sheet.
- Cut the chicken into 1-inch pieces, coat them with olive oil and the remaining seasoning. Place the chicken on the second baking sheet.
- Roast the sweet potatoes for 15 minutes, then add the chicken and any optional vegetables you’d like to include, continuing to roast for an additional 15-20 minutes until everything is cooked through and tender.
- Once roasted, divide the sweet potatoes and chicken into bowls, and top with fresh spinach or kale.
- Drizzle your dressing of choice on top and garnish with herbs, sesame seeds, or nuts. Serve immediately and enjoy!
Notes
These bowls store well for up to three days in the fridge or can be frozen for longer storage.
