- 4 cups cauliflower rice (store-bought or homemade)
- 8 oz cream cheese (softened or Greek yogurt for a lighter option)
- 1 cup shredded cheddar cheese (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- Optional: 1 cup chopped spinach (or broccoli florets or sliced mushrooms)
Instructions
- Preheat your oven to 375°F (190°C).
- If you’re using raw chicken, cook it until fully cooked through, then shred it into bite-sized pieces. If you have leftover chicken or rotisserie, just shred it.
- For the cauliflower rice, pulse fresh cauliflower in a food processor until it resembles rice, or simply grab a bag of store-bought cauliflower rice for convenience.
- Heat the olive oil in a skillet over medium heat, then add the cauliflower rice. Cook it for about 5-7 minutes until it becomes tender.
- If you’re adding any optional vegetables like spinach, broccoli, or mushrooms, sauté them in the skillet for a few minutes, then set everything aside.
- In a mixing bowl, combine the shredded chicken, cooked cauliflower rice, softened cream cheese, half of the shredded cheese, garlic powder, onion powder, paprika, salt, and black pepper until everything is blended well.
- Gently fold in the sautéed vegetables if you used them.
- Transfer this delicious mixture into a greased baking dish and top it off with the remaining cheese.
- Bake uncovered for 20-25 minutes until the cheese melts and becomes bubbly and golden.
