Description

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper to prevent sticking.
  2. Combine the rolled oats, chopped almonds, sunflower seeds, honey, melted coconut oil, vanilla extract, and salt in a large bowl. Stir well until evenly coated.
  3. Press the mixture firmly into the prepared baking pan, creating an even layer for the base.
  4. Bake the base in the preheated oven for 15-20 minutes, or until lightly golden brown. Remove and let cool slightly.
  5. Prepare the topping by mixing together the mixed berries, chia seeds, and maple syrup in a saucepan. Cook over medium heat, stirring occasionally, until thicker (about 5-7 minutes).
  6. Spread the berry topping evenly over the baked base.
  7. Let the bars cool completely in the pan before cutting them into squares or rectangles.
  8. Store the breakfast bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Notes

Add a dollop of Greek yogurt or nut butter for an extra treat. Experiment with flavors by swapping nuts or fruits.
