- 1 cup Greek yogurt
- 1/2 cup brown sugar
- 1/3 cup milk
- 1/2 cup oil (avocado, canola, or any other neutral oil)
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup mini chocolate chips
- 1 cup wild blueberries (frozen or fresh)
- Brown sugar (for sprinkling)
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Combine the Greek yogurt, milk, brown sugar, eggs, oil, and vanilla extract in a medium-sized bowl.
- Mix the dry ingredients: white whole wheat flour, rolled oats, baking powder, and salt in another bowl.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Add the mini chocolate chips and blueberries, stirring until incorporated.
- Scoop the batter into a muffin pan and sprinkle with brown sugar.
- Bake for 18-22 minutes or until a toothpick comes out clean.
Notes
Serve warm with butter or Greek yogurt. Store in an airtight container for up to 3 days at room temperature or freeze for up to three months.
