Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon honey
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Corn or flour tortillas

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes and bell peppers with olive oil, cumin, chili powder, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes, until tender and caramelized.
  4. Mix honey, lime juice, and cilantro in a small bowl.
  5. Combine the roasted vegetables and black beans in a large bowl, then drizzle the honey-lime mixture over the top and stir gently.
  6. Warm the tortillas in a skillet or oven, then fill each with the sweet potato and black bean mixture. Serve immediately.
