- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon honey
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- Corn or flour tortillas
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced sweet potatoes and bell peppers with olive oil, cumin, chili powder, salt, and pepper on a baking sheet.
- Roast in the oven for 25-30 minutes, until tender and caramelized.
- Mix honey, lime juice, and cilantro in a small bowl.
- Combine the roasted vegetables and black beans in a large bowl, then drizzle the honey-lime mixture over the top and stir gently.
- Warm the tortillas in a skillet or oven, then fill each with the sweet potato and black bean mixture. Serve immediately.
