Description

A tropical Hawaiian Chicken Salad made with juicy chicken, pineapple, crunchy veggies, and a creamy lime dressing. Perfect for lunch, dinner, or picnics!


Ingredients

2 boneless skinless chicken breasts

1 cup pineapple chunks (fresh or canned)

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup celery, chopped

1/3 cup Greek yogurt or mayonnaise

2 tbsp lime juice

1 tbsp olive oil

1 garlic clove, minced

Salt & black pepper to taste


Instructions

1. Marinate chicken with olive oil, lime juice, garlic, salt, and pepper for 15 minutes.

2. Grill chicken over medium heat for 6–8 minutes per side or bake at 375°F for 25 minutes.

3. Let chicken rest for 5 minutes, then dice into bite-sized pieces.

4. In a bowl, combine chicken, pineapple, bell pepper, onion, and celery.

5. Whisk together Greek yogurt and lime juice for the dressing.

6. Pour dressing over salad ingredients and mix well.

7. Chill for 30 minutes before serving.

Notes

You can swap Greek yogurt for mayonnaise for a richer flavor.

Add diced jalapeños for spice or avocado for extra creaminess.

Serve inside a pineapple shell for a stunning presentation.
