Instructions

  1. Marinate chicken breasts in a mixture of olive oil, soy sauce, lime juice, salt, and pepper for at least 30 minutes.
  2. Prepare coconut rice by cooking the rice and substituting half the water with coconut milk.

  4. Grill pineapple slices for 2-3 minutes on each side until caramelized.
  5. Serve grilled chicken on a bed of coconut rice, topped with grilled pineapple and garnished with green onions.
