- 1 can pineapple slices

Instructions
- Marinate chicken breasts in a mixture of olive oil, soy sauce, lime juice, salt, and pepper for at least 30 minutes.
- Prepare coconut rice by cooking the rice and substituting half the water with coconut milk.
- Heat grill or pan over medium-high heat and cook marinated chicken for 5-7 minutes on each side until fully cooked.
- Grill pineapple slices for 2-3 minutes on each side until caramelized.
