Description
This Ground Beef Potato Casserole is a hearty, comforting family-style dish layered with tender potatoes, savory beef, onions, cheese, and a creamy seasoned sauce. Perfect for weeknights or potlucks.
Ingredients
1 lb ground beef
1 medium onion, diced
3 cups thinly sliced potatoes (Yukon gold or russet)
2 cups shredded cheddar cheese
1 cup milk
1 cup beef broth
1 can (10.5 oz) cream of mushroom soup
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
Fresh parsley for serving
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. In a skillet, cook ground beef and diced onion over medium heat until browned. Drain excess grease.
3. Stir in garlic powder, paprika, salt, pepper, and Worcestershire sauce.
4. In a bowl, whisk together cream of mushroom soup, milk, and beef broth.
5. Layer half of the sliced potatoes in the baking dish.
6. Spread half of the beef mixture over the potatoes.
7. Pour half of the soup mixture over the top, then sprinkle with 1 cup of cheddar.
8. Repeat layers: potatoes, beef, soup mixture, ending with remaining cheese.
9. Cover with foil and bake for 45 minutes.
10. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and cheese is golden.
11. Let rest 10 minutes before serving. Garnish with parsley.
Notes
Add sliced mushrooms or bell peppers for extra veggies.
Swap cheddar with Monterey Jack or mozzarella.
For a crispy topping, add breadcrumbs during the last 10 minutes of baking.
Leftovers reheat well and are great for meal prep.
