Ingredients

1.5 pounds white chocolate chips (or milk chocolate)
1 tablespoon coconut oil or vegetable oil
½ to 1 teaspoon gel food coloring (green)

Instructions
1. Remove cream cheese from refrigerator 30-45 minutes before starting to reach room temperature.
2. Separate Oreos into cookies and filling. Discard filling or save for snacking.
3. Using food processor or sealed bag with rolling pin, crush Oreo cookies into fine crumbs.
4. Cut softened cream cheese into small cubes and place in large mixing bowl.
5. Beat cream cheese on medium speed 2-3 minutes using electric mixer until completely smooth.
6. Add room-temperature butter and beat 1-2 minutes until fully incorporated and light and fluffy.
7. Gradually add sifted powdered sugar ½ cup at a time, beating on low speed after each addition.
8. Add vanilla extract and sea salt, mixing on low speed just until combined.
9. Gently fold in finely crushed Oreo crumbs with spatula until evenly distributed.
10. If filling is too soft, refrigerate 20-30 minutes until firm enough to scoop.
11. Using cookie scoop or small melon baller, portion filling into balls approximately ¾ inch diameter.
12. Roll each portion between your palms into smooth spheres, working quickly.
13. Place shaped Grinch Oreo Balls on parchment-lined baking sheet with 1 inch space between each.
14. Freeze for at least 1 hour until very firm (or minimum 30 minutes for quick preparation).
15. Melt white chocolate chips with coconut oil in double boiler or microwave in 30-second intervals.
16. Stir chocolate between intervals until completely smooth. Temperature should be 86-90°F.
17. Add gel food coloring very gradually, starting with ½ teaspoon, until desired Grinch green achieved.

19. Rotate to coat all sides. Allow excess chocolate to drip back into bowl.
20. Transfer coated ball to clean parchment-lined baking sheet.
21. While chocolate is still wet and tacky, add decorations: crushed Oreos, red candies, gold leaf.
22. Drizzle melted dark chocolate for eyebrows and personality.
