Juicy marinated steak grilled to perfection, served over rice with tender grilled zucchini and drizzled with a creamy herb-garlic sauce a hearty and flavorful bowl that’s both fresh and satisfying.


Ingredients

— Steak Marinade —

1 lb flank or sirloin steak

2 tbsp olive oil

1 tbsp soy sauce

1 tbsp Worcestershire sauce

2 garlic cloves, minced

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

— Creamy Sauce —

1/4 cup Greek yogurt or sour cream

1 tbsp mayonnaise

1 tbsp lemon juice

1 garlic clove, minced

1 tbsp chopped parsley or chives

Salt and pepper, to taste

— Grilled Zucchini —

2 small zucchinis, sliced lengthwise

1 tbsp olive oil

Salt and pepper, to taste

— Bowls —

2 cups cooked rice or quinoa

1/4 cup crumbled feta or shaved Parmesan (optional)

Lemon wedges, for serving


Instructions

1. In a bowl, whisk olive oil, soy sauce, Worcestershire, garlic, paprika, pepper, and salt. Add steak and marinate at least 30 minutes (up to 4 hours).

2. Preheat grill or grill pan to medium-high heat. Grill steak 3–5 minutes per side for medium-rare or until desired doneness. Let rest before slicing.

3. Toss zucchini slices with olive oil, salt, and pepper. Grill 2–3 minutes per side until tender and charred.

4. In a small bowl, whisk together all creamy sauce ingredients until smooth. Adjust seasoning to taste.

5. Assemble bowls: divide rice between bowls, top with sliced steak, grilled zucchini, and drizzle with creamy sauce.

6. Garnish with feta, herbs, and a squeeze of lemon. Serve warm!

Notes

For extra flavor, add roasted red peppers or avocado to the bowls.

Swap the steak with grilled chicken or tofu for variation.

Use jasmine rice or cauliflower rice for different textures and carb options.
