Description

Ingredients

  • 1 pound Flank, Ribeye, or New York Strip steak
  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Preheat the grill or grill pan over medium heat and brush with olive oil.
  2. Slice zucchini and toss with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Grill zucchini for about 5-7 minutes on each side until tender.
  4. Pat steak dry, rub with olive oil, salt, and pepper.
  5. Grill steak for about 4-5 minutes per side (to medium-rare).
  6. Mix sour cream or Greek yogurt with Dijon mustard and chopped fresh herbs for the sauce.
  7. Let steak rest for a few minutes before slicing against the grain.
  8. Serve over cooked rice or mashed potatoes with grilled zucchini and herb sauce on top.

Notes

For a vegetarian version, substitute steak with grilled portobello mushrooms or seasoned tofu.
