- 1 pound Flank, Ribeye, or New York Strip steak
- 2 medium Zucchini
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 tablespoon Dijon Mustard
- 1 cup Sour Cream or Greek Yogurt
- 2 tablespoons Fresh Herbs (Chives or Parsley)
- 2 cups Cooked Rice or Mashed Potatoes
Instructions
- Preheat the grill or grill pan over medium heat and brush with olive oil.
- Slice zucchini and toss with olive oil, garlic powder, onion powder, salt, and pepper.
- Grill zucchini for about 5-7 minutes on each side until tender.
- Pat steak dry, rub with olive oil, salt, and pepper.
- Grill steak for about 4-5 minutes per side (to medium-rare).
- Mix sour cream or Greek yogurt with Dijon mustard and chopped fresh herbs for the sauce.
- Let steak rest for a few minutes before slicing against the grain.
- Serve over cooked rice or mashed potatoes with grilled zucchini and herb sauce on top.
Notes
For a vegetarian version, substitute steak with grilled portobello mushrooms or seasoned tofu.
