- 8 to 10 boneless skinless chicken thighs
- 1 cup Greek yogurt (plain, full-fat)
- 3 to 4 sprigs fresh dill
- 1 shallot (minced)
- 3 tablespoons minced garlic
- 1 lemon (juiced and zested)
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 tablespoon dried oregano
Instructions
- Pat dry the chicken: If necessary, pat dry the chicken thighs with a paper towel.
- Make the marinade: In a mixing bowl, combine Greek yogurt, minced fresh dill, shallots, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and dried oregano.
- Marinate the chicken: Add chicken thighs and toss until well-coated, covering and refrigerating for at least 1 hour or overnight.
- Preheat the grill: Heat the grill to 400°F.
- Grill the chicken: Place chicken thighs on the grill, smooth side down, for 8 to 10 minutes, flipping halfway.
- Rest before serving: Remove chicken and let it rest for at least five minutes before serving.
Notes
Serve with fresh salad, roasted veggies, or classic sides. Refrigerate leftovers for 3 to 4 days or freeze for up to 3 months.
