Description
These Greek-Style Lemon Potatoes are perfectly roasted with olive oil, lemon juice, garlic, and oregano crispy on the outside, fluffy inside, and bursting with Mediterranean flavor.
Ingredients
2 lbs Yukon Gold or Russet potatoes, peeled and cut into wedges
1/3 cup olive oil
1/4 cup fresh lemon juice
3 garlic cloves, minced
1 cup chicken or vegetable broth
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 400°F (200°C).
2. Arrange the potato wedges in a single layer in a large baking dish or sheet pan.
3. In a small bowl, whisk together olive oil, lemon juice, garlic, broth, oregano, salt, and pepper.
4. Pour the mixture over the potatoes and toss to coat evenly.
5. Roast uncovered for 45–55 minutes, flipping once halfway through, until golden brown and tender.
6. Garnish with chopped parsley and serve warm.
Notes
For extra crispiness, roast under the broiler for 3–5 minutes at the end.
Try adding a sprinkle of feta cheese before serving for a Greek-inspired twist.
