Description
Traditional Greek Honey Pie with crispy phyllo pastry, creamy ricotta filling, and golden honey syrup. This authentic Mediterranean dessert combines simple ingredients for an elegant result.
Ingredients
1 package phyllo pastry (16 oz), thawed
2 cups whole milk ricotta cheese
1/2 cup Greek yogurt
3 large eggs
1/4 cup granulated sugar
1 teaspoon vanilla extract
Zest of 1 lemon
1 cup honey (preferably Greek thyme honey)
1/2 cup water
2 tablespoons fresh lemon juice
1 cinnamon stick
3 whole cloves
1/2 cup melted unsalted butter
Instructions
1. Preheat oven to 350°F (175°C) and butter a 9×13-inch baking dish.
2. Make honey syrup by combining honey, water, lemon juice, cinnamon stick, and cloves in a saucepan. Boil then simmer 10 minutes until thickened. Cool completely.
3. Mix ricotta cheese, Greek yogurt, eggs, sugar, vanilla extract, and lemon zest until smooth.
4. Layer 8 phyllo sheets in prepared dish, brushing each with melted butter.
5. Spread ricotta mixture evenly over phyllo base.
6. Top with remaining phyllo sheets, brushing each layer with butter.
7. Bake 45-50 minutes until golden brown and center is set.
8. Cool 15 minutes, then pour cooled honey syrup over warm pie.
9. Let stand 2 hours before serving to allow syrup absorption.
Notes
Always use cooled syrup on warm (not hot) pie to prevent soggy phyllo.
Keep unused phyllo sheets covered with damp towel while working.
Pie can be made 2 days ahead – flavors improve with time.
Store covered at room temperature up to 2 days or refrigerated up to 1 week.
