- 2 Chicken breasts
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 3 cloves Garlic, minced
- 1 tsp Oregano
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 cup Quinoa or rice
- 1 Cucumber, chopped
- 2 Tomatoes, chopped
- 1 Red onion, chopped
- 1/2 cup Feta cheese, crumbled
- 1/2 cup Tzatziki sauce (yogurt, cucumber, garlic, dill, lemon)
Instructions
- Start by marinating the chicken breasts. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Toss the chicken in this mixture, covering it well, then let it marinate for at least 30 minutes.
- While the chicken marinates, heat your grill or grill pan. Once hot, place the marinated chicken on it and cook until it’s perfectly grilled and no longer pink inside, about 6-7 minutes per side. Let it rest for a few minutes before slicing.
- Prepare your quinoa or rice according to the package instructions, usually taking about 15-20 minutes. Fluff once cooked and set aside.
- Chop your cucumbers, tomatoes, and red onion into small, bite-sized pieces.
- Assemble your bowls by placing a scoop of quinoa or rice at the bottom, layering on sliced grilled chicken, veggies, and crumbled feta cheese on top.
- Add a generous dollop of tzatziki sauce for a creamy finish.
Notes
Serve with warm pita bread or a Greek salad for a complete meal. Store leftovers in an airtight container for up to 3 days, keeping tzatziki separate.
