- 2 cups cooked chicken breast, diced
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 1/2 cup Kalamata olives, pitted and halved
- Feta cheese, crumbled (optional)
- Fresh parsley, chopped
- Salt and pepper to taste
- 1 cup Greek yogurt for tzatziki sauce
- 1 cucumber, grated and drained for tzatziki
- 2 cloves garlic, minced
- 1 tablespoon lemon juice for tzatziki
- Salt to taste for tzatziki
Instructions
- Combine the diced chicken, cooked quinoa or rice, cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, and parsley in a large bowl.
- Season the mixture with salt and pepper to taste. Give everything a good toss to ensure the flavors meld together nicely.
- Mix together Greek yogurt, the grated cucumber, minced garlic, lemon juice, and a pinch of salt in a separate bowl to create a creamy tzatziki sauce.
- Serve the chicken mixture in bowls, topping each one with a generous dollop of tzatziki sauce. Optionally, sprinkle some crumbled feta cheese on top.
Notes
Use leftover chicken for added flavor. Pre-chop your veggies to save time.
