Fresh and vibrant Greek Chicken Bowls filled with flavorful chicken, fresh veggies, and creamy tzatziki sauce.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • Feta cheese, crumbled (optional)
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup Greek yogurt for tzatziki sauce
  • 1 cucumber, grated and drained for tzatziki
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice for tzatziki
  • Salt to taste for tzatziki

Instructions

  1. Combine the diced chicken, cooked quinoa or rice, cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, and parsley in a large bowl.
  2. Season the mixture with salt and pepper to taste. Give everything a good toss to ensure the flavors meld together nicely.
  3. Mix together Greek yogurt, the grated cucumber, minced garlic, lemon juice, and a pinch of salt in a separate bowl to create a creamy tzatziki sauce.
  4. Serve the chicken mixture in bowls, topping each one with a generous dollop of tzatziki sauce. Optionally, sprinkle some crumbled feta cheese on top.

Notes
