- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup cooked quinoa or brown rice
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- Juice of 1 lemon
- 2 tablespoons tahini or yogurt dressing
Instructions
- Preheat your grill to medium-high heat.
- Marinate the chicken breasts in a bowl with olive oil, dried oregano, salt, and pepper.
- Grill the marinated chicken for about 6-7 minutes on each side, until the internal temperature reaches 165°F.
- Remove the chicken and let it rest for a few minutes before slicing.
- Layer cooked quinoa or brown rice in serving bowls.
- Top with sliced grilled chicken, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and olives.
- Drizzle fresh lemon juice and tahini or yogurt dressing over the top.
