Delicious Greek Chicken Bowls filled with grilled chicken, fresh veggies, and zesty flavors, perfect for a quick and healthy meal.


Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cooked quinoa or brown rice
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • Juice of 1 lemon
  • 2 tablespoons tahini or yogurt dressing

Instructions

  1. Preheat your grill to medium-high heat.
  2. Marinate the chicken breasts in a bowl with olive oil, dried oregano, salt, and pepper.
  3. Grill the marinated chicken for about 6-7 minutes on each side, until the internal temperature reaches 165°F.
  4. Remove the chicken and let it rest for a few minutes before slicing.
  5. Layer cooked quinoa or brown rice in serving bowls.
  6. Top with sliced grilled chicken, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and olives.
  7. Drizzle fresh lemon juice and tahini or yogurt dressing over the top.
