1/3 cup all-purpose flour
3 cups whole milk, warmed
1 pizza dough (store-bought or homemade)
2 cups shredded cheddar cheese
4–6 large eggs (optional)
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Pinch of cayenne pepper
Fresh chives for garnish
Instructions

2. Cook sausage in large skillet, breaking into small pieces until fully cooked
3. Whisk flour into cooked sausage and fat, cook for 2-3 minutes
4. Gradually add warm milk while whisking constantly to prevent lumps
5. Season gravy with pepper, salt, garlic powder, paprika, and cayenne
6. Roll or stretch pizza dough to fit baking surface with slight edge
7. Pre-bake dough for 5-7 minutes until lightly set
8. Spread warm sausage gravy evenly, leaving 1-inch border
9. Sprinkle with shredded cheese and create wells for eggs if using
10. Crack eggs into wells during last 8-10 minutes of baking
11. Bake for 15-18 minutes until crust is golden and gravy bubbles
12. Garnish with fresh chives and serve immediately
Notes
Pre-baking the dough prevents soggy crust and ensures proper texture.
Warm milk prevents lumpy gravy – whisk constantly while adding.
Can make gravy up to 2 days ahead and reheat before assembly.
Adjust gravy thickness by adding milk or cooking longer to reduce.
