An elegant yet effortless slow cooker meal featuring tender chicken breasts simmered in a luscious fig jam sauce with balsamic and herbs, finished with creamy goat cheese for the perfect sweet-savory balance.
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
1/2 cup fig jam or preserves
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
2 garlic cloves, minced
1/2 cup chicken broth
1 tsp fresh thyme leaves (or 1/2 tsp dried)
4 oz goat cheese, crumbled
Fresh thyme or parsley for garnish
Instructions
1. Season chicken with salt and pepper on both sides.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden (optional but adds flavor).
3. Transfer chicken to the slow cooker.
4. In a small bowl, whisk together fig jam, balsamic vinegar, Dijon mustard, garlic, chicken broth, and thyme.
5. Pour the mixture over the chicken, ensuring all pieces are coated.
6. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender and cooked through.
7. Before serving, top each chicken breast with crumbled goat cheese and spoon some of the fig sauce on top.
8. Garnish with fresh thyme or parsley and serve warm.
Notes
Pairs beautifully with mashed potatoes, wild rice, or roasted vegetables.
Substitute honey or apricot jam for the fig jam for a flavor twist.
For a richer sauce, stir in a splash of cream or butter at the end of cooking.
