Description

A festive and cozy Gingerbread Yule Log Cake filled with spiced molasses flavor and rolled with a luscious cream cheese filling the perfect holiday centerpiece dessert.


Ingredients

3/4 cup all-purpose flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp ground ginger

1 tsp cinnamon

1/4 tsp nutmeg

3 large eggs

1/2 cup brown sugar

1/4 cup molasses

1 tsp vanilla extract

1 tbsp vegetable oil

Cream Cheese Filling:

8 oz cream cheese, softened

4 tbsp unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

Topping:

Powdered sugar for dusting

Candied ginger or sugared cranberries for garnish (optional)


Instructions

1. Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.

2. In a bowl, whisk flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg.

3. In another bowl, beat eggs, brown sugar, molasses, vanilla, and oil until thick and light, about 2–3 minutes.

4. Gently fold dry ingredients into wet mixture until just combined.

5. Spread batter evenly into prepared pan.

6. Bake for 10–12 minutes, or until the cake springs back when lightly touched.

7. Immediately invert warm cake onto a clean kitchen towel dusted with powdered sugar.

8. Peel off parchment paper and carefully roll cake up in the towel (starting from the short end). Let cool completely.

9. For filling: beat cream cheese, butter, powdered sugar, and vanilla until smooth.

10. Unroll cooled cake and spread evenly with filling.

11. Re-roll the cake without the towel and wrap in plastic wrap. Chill for at least 1 hour before serving.

12. Dust with powdered sugar and garnish with candied ginger or sugared cranberries if desired.

Notes

Roll the cake while it’s still warm to prevent cracking.

For extra flavor, add a hint of orange zest to the filling.
