Description
Soft, spiced, and dipped in creamy white chocolate these gingerbread truffles capture the warmth of the holidays in every bite. A simple, no-bake treat perfect for gifting or sharing.
Ingredients
1 (8 oz) package cream cheese, softened
2 1/2 cups finely crushed gingersnap cookies
1/4 cup molasses
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
10 oz white chocolate or white candy melts, melted
Optional: crushed gingersnaps or festive sprinkles for garnish
Instructions
1. In a large bowl, combine crushed gingersnap cookies, softened cream cheese, molasses, cinnamon, ginger, and nutmeg. Mix until smooth and dough-like.
2. Roll mixture into 1-inch balls and place them on a parchment-lined baking sheet.
3. Freeze for 20–30 minutes until firm.
4. Dip each chilled truffle into melted white chocolate, coating evenly. Place back on parchment.
5. Top immediately with crushed cookies or sprinkles if desired.
6. Refrigerate until chocolate is set, about 15 minutes.
7. Store in an airtight container in the refrigerator until ready to serve.
Notes
For a darker flavor, use dark or milk chocolate coating instead of white.
Add a pinch of cloves or allspice for extra holiday spice.
