Description

Velvety gingerbread-spiced latte mousse shaped into elegant domes and finished with a glossy coffee glaze. A festive, show-stopping holiday dessert.


Ingredients

GINGERBREAD LATTE MOUSSE:

1 cup heavy cream (cold)

1/2 cup whole milk

2 tsp instant espresso powder

1/4 cup brown sugar

1 tsp ground ginger

1/2 tsp cinnamon

1/8 tsp nutmeg

1/8 tsp cloves

1 tsp vanilla extract

1 1/2 tsp gelatin + 2 tbsp cold water

1 cup whipped cream

GINGERBREAD COOKIE BASE:

68 mini gingerbread cookies or gingersnaps, crushed

2 tbsp melted butter

COFFEE MIRROR GLAZE:

1/2 cup sugar

1/4 cup sweetened condensed milk

1/4 cup water

1 tbsp instant espresso powder

1 tbsp gelatin + 3 tbsp water

1/2 cup white chocolate chips


Instructions

1. Bloom the mousse gelatin by sprinkling it over 2 tbsp cold water.

2. Heat milk, espresso powder, brown sugar, and spices in a small saucepan until steaming.

3. Remove from heat and stir in vanilla and bloomed gelatin until fully dissolved.

4. Cool the mixture slightly, then fold in the whipped cream.

5. Pour mousse into silicone dome molds, filling about 3/4 full.

6. Mix crushed cookies with melted butter and press into the top of each dome.

7. Freeze 4–6 hours or until completely solid.

8. For the glaze, bloom gelatin in 3 tbsp water.

9. Heat sugar, condensed milk, espresso powder, and water until steaming.

10. Remove from heat; add gelatin and white chocolate.

11. Blend until silky smooth; cool to 90–95°F.

12. Unmold the frozen domes and place on a rack.

13. Pour the mirror glaze evenly over domes.

14. Refrigerate to set before serving.

Notes

Use silicone molds for best results.

Freeze domes fully so the glaze sets smoothly.

Add gold leaf, cocoa powder, or gingerbread crumbs for decoration.

Domes can be made ahead and stored in the freezer.
