Ingredients
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
2 tbsp fresh ginger, grated
2 medium carrots, sliced
1 stalk celery, chopped
6 cups chicken broth
1 tbsp soy sauce
1 tbsp rice vinegar (optional)
2 cups shredded cooked chicken (rotisserie works great)
4 oz egg noodles or rice noodles
1/2 tsp turmeric (optional, for color)
Salt and pepper to taste
Fresh lime juice (to finish)
Chopped green onions and cilantro for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, and ginger; sauté for 2–3 minutes until fragrant.
3. Add carrots and celery, cooking another 3–4 minutes.
4. Pour in chicken broth, soy sauce, and turmeric (if using); bring to a gentle boil.
5. Add noodles and cook according to package directions until tender.
6. Stir in shredded chicken and simmer for 3–5 minutes to heat through.
7. Season with salt, pepper, and a splash of rice vinegar or lime juice to brighten the flavor.
8. Ladle into bowls and top with green onions and cilantro before serving.
Notes
Add a little chili oil or sliced jalapeño for a spicy kick.
Swap noodles for rice or quinoa to make it gluten-free.
This soup stores well for up to 3 days — just add extra broth when reheating as noodles absorb liquid.
