Description

Adorable Ghostly Yogurt Parfaits ready in just 15 minutes! Three beautiful layers creamy sweetened yogurt, crunchy granola, and vibrant berry compote topped with cute ghost decorations. Perfect for Halloween parties, kids’ treats, or healthy breakfasts. No cooking required! These Instagram-worthy parfaits look impressive but are incredibly easy to make.

Ingredients

Scale

3 cups plain Greek yogurt (full-fat or 2%)

3 tablespoons honey or maple syrup

1 teaspoon pure vanilla extract

Pinch of kosher salt

2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or sugar

1 tablespoon lemon juice

½ teaspoon vanilla extract

1½ cups granola (store-bought or homemade)

¼ cup crushed graham crackers or vanilla wafer cookies

Whipped cream or marshmallows (for ghost decorations)

Mini chocolate chips or edible black marker (for ghost faces)

White chocolate chips optional (for ghost shapes)

Instructions

1. Prepare sweetened yogurt: In a medium bowl, stir Greek yogurt until smooth. Add 3 tablespoons honey, 1 teaspoon vanilla extract, and a pinch of salt. Fold gently until fully incorporated. Transfer to a piping bag or large zip-top bag with one corner snipped.

2. Make berry compote: Combine mixed berries, 2 tablespoons honey, lemon juice, and ½ teaspoon vanilla in a bowl. Mash gently with a fork, leaving some berries whole for texture. Let sit for 10 minutes to release natural juices.

3. Begin layering: Pipe or spoon 3-4 tablespoons of sweetened yogurt into the bottom of each clear glass (8-10 oz), creating an even 1-inch layer.

4. Add granola layer: Sprinkle 2-3 tablespoons of granola evenly over the yogurt, gently pressing down so it adheres slightly.

5. Add berry layer: Spoon 2-3 tablespoons of berry compote over the granola, distributing berries and juice evenly.

6. Repeat layers: Pipe another layer of yogurt (3-4 tablespoons) over berries. Add another granola layer (2 tablespoons), then another berry layer (2 tablespoons).

7. Top with final yogurt layer: Finish with a generous dollop of yogurt on top—this becomes your canvas for decorations.

8. Create ghost decorations: Pipe whipped cream into ghost shapes on top, or arrange mini marshmallows. Use mini chocolate chips for eyes and mouths, pressing gently into whipped cream.

9. Serve immediately or cover and refrigerate for up to 24 hours. Granola will soften slightly over time but remains pleasantly textured.

Notes

Use thick Greek yogurt exclusively—thin yogurt releases whey that makes layers watery and soggy granola.

For maximum crunch, add granola within 2-4 hours of serving. For make-ahead parfaits, store granola separately and add just before serving.

Frozen berries work beautifully—thaw completely and drain excess liquid before using.

Dairy-free adaptation: Use coconut, cashew, or almond yogurt with dairy-free granola and coconut whipped cream.

Sugar-free version: Sweeten with stevia or monk fruit sweetener instead of honey.

Store assembled parfaits covered in refrigerator for up to 48 hours, though granola becomes softer over time.

Use clear serving glasses to showcase beautiful layers—mason jars, wine glasses, or plastic tumblers all work perfectly.

Create a parfait bar for parties: set out yogurt, granola, berries, and toppings so guests build their own.
