Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the chopped bell peppers, sliced zucchini, and sliced carrots in a large bowl.
  3. Add the minced garlic, olive oil, dried herbs, salt, and pepper to the bowl. Toss everything together until coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
