A flavorful twist on classic meatloaf this Garlic Parmesan Chicken Meatloaf is juicy, tender, and loaded with cheesy, garlicky goodness. Perfect for a comforting dinner that’s anything but ordinary.
Ingredients
1 1/2 lbs ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 cloves garlic, minced
1/4 cup milk
1 large egg
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley
1/2 cup shredded mozzarella (for topping)
2 tbsp olive oil (for brushing)
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, garlic, milk, egg, Italian seasoning, salt, pepper, and parsley.
3. Mix gently with your hands until just combined — do not overmix.
4. Shape the mixture into a loaf and place it on the prepared baking sheet or in the loaf pan.
5. Brush the top with olive oil for browning.
6. Bake for 35–40 minutes, or until internal temperature reaches 165°F (74°C).
7. Remove from oven and sprinkle mozzarella on top. Return to oven for 5 minutes until melted.
8. Let rest for 5–10 minutes before slicing and serving.
Notes
Serve with mashed potatoes, green beans, or a simple salad for a balanced meal.
For extra flavor, add a drizzle of garlic butter or sprinkle more Parmesan before serving.
Leftovers make great sandwiches or wraps the next day.
