6 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried)

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)

1 tablespoon fresh parsley, chopped for garnish

1 teaspoon coarse sea salt

½ teaspoon freshly cracked black pepper

¼ teaspoon red pepper flakes (optional)

1 tablespoon Worcestershire sauce (optional)

Optional: lemon wedges, grated Parmesan, fresh herbs for garnish


Instructions

1. Remove steak from refrigeration 30-45 minutes before cooking to reach room temperature.

2. Pat steak completely dry with paper towels, pressing firmly to remove all surface moisture.

3. Cut steak into uniform 1 to 1.5-inch cubes. Season generously with salt and pepper on all sides.

4. Prepare all other ingredients: mince garlic, chop herbs, measure butter. Have everything ready before cooking.

5. Heat a large cast-iron skillet or heavy pan over high heat for 3-4 minutes until almost smoking.

6. Add high-heat oil and swirl to coat bottom. Working in batches, add steak cubes in single layer with space between each.

7. Let cook undisturbed for 2 minutes until deep brown crust forms on bottom. Do not move or stir.

8. Using tongs, flip each cube to a new side and sear 1-2 minutes. Continue turning until 3-4 sides are caramelized.

10. Repeat searing process with remaining steak cubes if you worked in batches.

12. When butter melts and foams, add garlic, thyme, and rosemary. Stir constantly 30-45 seconds until fragrant.

13. Return all seared steak and accumulated juices to pan. Add remaining 2 tablespoons butter.

14. Toss everything together for 1-2 minutes, basting meat with melted garlic butter until each piece glistens.

15. If using Worcestershire sauce, drizzle now and toss to coat. Remove from heat immediately.

16. Transfer to serving platter and let rest 3-5 minutes. Pour remaining garlic butter over top.
