Ingredients
2 pounds sirloin steak, cut into 1-inch cubes
4 tablespoons unsalted butter
6 cloves fresh garlic, minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1 tablespoon fresh thyme leaves
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
Instructions

2. Heat olive oil in large cast-iron skillet over medium-high heat.
3. Sear steak cubes in batches, 2-3 minutes per side until golden brown.
4. Add butter and minced garlic to pan, basting steak for 1 minute.
5. Remove steak and tent with foil to rest.
6. Add heavy cream to pan, scraping up browned bits.
7. Whisk in Parmesan cheese until smooth and creamy.
8. Return steak to pan, toss to coat in sauce.
9. Garnish with fresh thyme and parsley before serving.
10. Serve immediately over mashed potatoes or pasta.
Notes
Don’t overcrowd the pan when searing – cook in batches for best results.
Use instant-read thermometer for perfect doneness (130°F for medium-rare).
Let steak come to room temperature 30 minutes before cooking.
Fresh garlic works much better than pre-minced for this recipe.
Store leftovers in refrigerator up to 3 days.
