- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season them generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until they are nicely browned. Remove the steak from the skillet and set it aside.
- Add butter to the same skillet. Once it melts, add the minced garlic and cook for about 30 seconds until it becomes fragrant.
- Toss the zucchini into the skillet and cook for 3-5 minutes, stirring occasionally, until they are tender-crisp.
- Return the steak bites to the skillet, coating everything in the delicious garlic butter.
- Cook for another 1-2 minutes until the steak heats through.
- Garnish with fresh parsley if desired and serve immediately.
Notes
For a twist, serve the steak bites in warm tortillas or over rice or mashed potatoes. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
