Ingredients
**Crust:**
1 1/2 cups chocolate cookie crumbs (Oreo or similar)
1/4 cup melted butter
2 tbsp sugar
**Cheesecake Filling:**
24 oz cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 cup sour cream
1 tsp vanilla extract
1 tbsp lemon juice
Gel food colorings: navy blue, violet, and black
**Galaxy Glaze (optional):**
1/2 cup blueberry or black currant jam
1 tsp edible luster dust (silver or purple shimmer)
1 tbsp water (to thin if needed)
Instructions
1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2. Mix cookie crumbs, melted butter, and sugar in a bowl. Press into the bottom of the pan. Chill while preparing the filling.
3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
4. Blend in sour cream, vanilla extract, and lemon juice until creamy.
5. Divide the batter into four bowls. Tint each with gel food coloring: one plain, one navy blue, one violet, and one black.
6. Spoon dollops of each color randomly into the crust, alternating colors for a marbled galaxy effect.
7. Use a skewer or knife to gently swirl through the batter — do not overmix.
8. Bake for 55–65 minutes, until center is just set but slightly jiggly.
9. Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours or overnight.
10. Optional: Warm jam with luster dust to make a glossy galaxy glaze and drizzle lightly over the chilled cheesecake before serving.
Notes
Use gel food coloring for vibrant colors without thinning the batter.
To enhance the cosmic effect, top with edible stars or a sprinkle of silver dust.
The cheesecake can be frozen for up to 2 months — thaw overnight in the fridge before serving.
