Ingredients
- Rice paper wrappers
- Lettuce leaves
- Julienned carrots
- Cucumber, sliced
- Bell peppers, sliced
- Fresh herbs (like mint or cilantro)
- Cooked shrimp or tofu (optional)
- Peanut butter
- Soy sauce
- Lime juice
- Garlic, minced
- Water
Instructions
- Prepare all vegetables by washing and slicing them into thin strips.
- If using shrimp or tofu, cook according to package instructions.
- In a bowl, combine peanut butter, soy sauce, lime juice, and minced garlic. Mix until smooth, adding water gradually to adjust consistency.
- Dip a rice paper wrapper in warm water for about 10 seconds until softened, then lay it flat.
- Place a lettuce leaf in the center, add veggies, herbs, and shrimp/tofu if using.
- Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
- Repeat with remaining ingredients.
- Serve fresh rolls with creamy peanut sauce for dipping.
Notes
Store leftovers in an airtight container with a damp paper towel to keep them fresh for up to 3 days.
