Ingredients

  • Rice paper wrappers
  • Lettuce leaves
  • Julienned carrots
  • Cucumber, sliced
  • Bell peppers, sliced
  • Fresh herbs (like mint or cilantro)
  • Cooked shrimp or tofu (optional)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic, minced
  • Water

Instructions

  1. Prepare all vegetables by washing and slicing them into thin strips.
  2. If using shrimp or tofu, cook according to package instructions.
  3. In a bowl, combine peanut butter, soy sauce, lime juice, and minced garlic. Mix until smooth, adding water gradually to adjust consistency.
  4. Dip a rice paper wrapper in warm water for about 10 seconds until softened, then lay it flat.
  5. Place a lettuce leaf in the center, add veggies, herbs, and shrimp/tofu if using.
  6. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
  7. Repeat with remaining ingredients.
  8. Serve fresh rolls with creamy peanut sauce for dipping.

Notes

Store leftovers in an airtight container with a damp paper towel to keep them fresh for up to 3 days.
