Ingredients
3 ripe peaches, diced
1/4 cup red onion, finely chopped
1 small jalapeño, deseeded and minced
2 tbsp fresh cilantro, chopped
Juice of 1 lime
1/4 tsp sea salt
1 tsp olive oil (optional)
Instructions
1. Wash and dry all produce.
2. Dice the peaches, onion, and jalapeño.
3. Chop cilantro and juice the lime.
4. Combine all ingredients in a bowl.
5. Add salt and olive oil if using.
6. Mix gently to combine.
7. Let sit 5–10 minutes before serving.
Notes
Use firm peaches to avoid mushiness.
Adjust jalapeño to taste for spiciness.
Store leftovers in an airtight container for up to 2 days.
