3 cloves garlic, minced

1/2 cup dry red wine

6 cups beef broth

2 sprigs fresh thyme

1 bay leaf

1 tbsp Worcestershire sauce

1 tbsp balsamic vinegar

1 baguette, sliced and toasted

2 cups shredded Gruyère cheese

Fresh parsley for garnish


Instructions

1. Preheat oven to 325°F (160°C).

2. Season short ribs generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear short ribs on all sides until browned, then remove and set aside.

3. Reduce heat to medium. Add butter and sliced onions to the pot. Cook for 25–30 minutes, stirring often, until onions are deeply caramelized. Add sugar midway through to help them brown.

4. Stir in garlic and cook for 1 minute until fragrant. Deglaze the pan with red wine, scraping up any browned bits from the bottom.

5. Return short ribs to the pot along with beef broth, thyme, bay leaf, Worcestershire sauce, and balsamic vinegar. Bring to a simmer.

6. Cover and transfer to the oven. Braise for 2½ to 3 hours, until meat is tender and falls off the bone.

7. Remove short ribs from the soup, shred the meat, and discard bones. Return meat to the pot and adjust seasoning to taste.
