Description

Simple and delicious breakfast sandwiches that you can prepare in advance and store in the freezer for busy mornings.


Ingredients

  • 12 eggs
  • 2 Tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
  • 12 English muffins
  • 12 slices cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Generously grease a 9×13-inch pan.
  3. Whisk the eggs, milk, salt, and pepper together until well combined.
  4. Pour the egg mixture into the greased pan and bake for 18-22 minutes, or until the center is set. Do not over-cook!
  5. Remove from the oven and allow to cool before cutting into 12 squares.
  6. Top each English muffin half with egg, cheese, and your choice of meat. Then, place the other half of the muffin on top.
  7. If consuming right away, heat the sandwiches at 350°F (175°C) for about 5 minutes or until the cheese melts.

Notes

Wrap each sandwich individually in plastic wrap and place them in a freezer-safe bag. They can be stored in the freezer for up to 3 months. For reheating, microwave for 1-2 minutes or bake at 350°F (175°C) for about 10-15 minutes.
