Description

Ingredients
2 cups all-purpose flour
2 tbsp cornstarch
1 tbsp sugar
1 tbsp baking powder
Pinch of salt
2 large eggs, separated
1⅞ cups milk or buttermilk
¼ cup melted butter
1 tsp vanilla extract
Optional: cinnamon, nutmeg, or zest
Instructions
1. Preheat Belgian waffle iron to medium-high heat.
2. Whisk dry ingredients together.
3. In separate bowl, whisk egg yolks, milk, butter, and vanilla.
4. Whip egg whites to soft peaks.
5. Gently fold whites into batter.
6. Grease waffle iron; pour batter evenly.
7. Cook until golden and crisp, about 4-5 minutes.
8. Transfer waffles to wire rack to stay crisp.
9. Serve immediately with toppings.
Notes
Best when batter used immediately.
Freeze leftover waffles on tray, then store in zip-top bag. Reheat in toaster oven for crispness.
