- 2 ripe bananas
- 1 cup Greek yogurt
- 1 cup oat flour (or gluten-free flour of choice)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup milk (dairy or non-dairy)
- Toppings: fresh fruits, nuts, almond butter
Instructions
- Mash the ripe bananas until smooth.
- Add the Greek yogurt, milk, and vanilla extract, and mix well.
- Combine the oat flour, baking powder, and cinnamon in another bowl.
- Gradually add the dry ingredients to the wet mixture until combined.
- Heat a non-stick skillet over medium heat.
- Pour batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve with your choice of toppings such as fresh fruits, nuts, or almond butter.
Notes
For best results, use very ripe bananas with plenty of brown spots. Allow batter to rest for fluffier pancakes.
