- 1/4 cup peanut butter
- 1 egg

- 1 tsp baking powder
- 1/2 tsp salt
- 2/3 cup oat flour
- 1/2 cup chocolate chips
- 1/2 cup walnuts (chopped)
- 1/2 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked and mashed sweet potato, vanilla extract, pure maple syrup, egg, peanut butter, and melted coconut oil in a large bowl.
- Mix the dry ingredients: cocoa powder, baking powder, salt, and oat flour in a separate bowl.
- Add the dry mixture to the wet ingredients and stir until you have a smooth batter.
- Toss in the chocolate chips, chopped walnuts, and mini marshmallows.
- Pour the batter into a prepared 8×8-inch baking pan.
- Bake for about 22-28 minutes, checking for doneness with a toothpick.
- Cool slightly before serving; optional to drizzle melted chocolate on top.
