- 3/4 cup cottage cheese
- 3 large eggs
- 1/4 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Combine cottage cheese, eggs, almond flour, baking powder, salt, and vanilla extract in a bowl.
- Blend until smooth.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour batter onto the skillet, forming small pancakes.
- Cook until bubbles form on the surface and edges look set, then flip and cook for another 1-2 minutes until golden brown.
- Serve warm with your favorite toppings.
