Ingredients

Instructions

  1. Combine cottage cheese, eggs, almond flour, baking powder, salt, and vanilla extract in a bowl.
  2. Blend until smooth.
  3. Heat a non-stick skillet over medium heat and add a little butter or oil.
  4. Pour batter onto the skillet, forming small pancakes.
  5. Cook until bubbles form on the surface and edges look set, then flip and cook for another 1-2 minutes until golden brown.
  6. Serve warm with your favorite toppings.
