- 4 chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the minced garlic and chopped mushrooms, sauté until softened (about 5-7 minutes).
- Mix the sautéed mushrooms with cream cheese, mozzarella cheese, parsley, salt, and pepper until well combined.
- Cut a pocket in each chicken breast, taking care not to slice all the way through. Fill each pocket with the mushroom mixture.
- Place the stuffed chicken breasts in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
Notes
For a complete meal, serve with a green salad or roasted veggies.
