Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add the minced garlic and chopped mushrooms, sauté until softened (about 5-7 minutes).
  3. Mix the sautéed mushrooms with cream cheese, mozzarella cheese, parsley, salt, and pepper until well combined.
  4. Cut a pocket in each chicken breast, taking care not to slice all the way through. Fill each pocket with the mushroom mixture.
  5. Place the stuffed chicken breasts in a baking dish and drizzle with olive oil.
  6. Bake for 25-30 minutes, or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before serving.
