Description
Sweet Medjool dates stuffed with a creamy feta-Parmesan blend, roasted to perfection, and finished with a drizzle of honey and a sprinkle of herbs and crushed walnuts for irresistible flavor and crunch.
Ingredients
12 Medjool dates, pitted
1/4 cup crumbled feta cheese
2 tbsp grated Parmesan cheese
1 tbsp cream cheese (optional, for creaminess)
1 tbsp chopped walnuts
1 tsp honey (plus more for drizzling)
1 tsp fresh thyme or rosemary, finely chopped
Olive oil spray or brush for roasting
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a small bowl, mix feta, Parmesan, cream cheese (if using), honey, thyme, and a pinch of pepper until combined.
3. Carefully open each date and stuff with the cheese mixture.
4. Arrange stuffed dates on the baking sheet and lightly brush or spray with olive oil.
5. Roast for 8–10 minutes, until cheese is warmed and slightly golden.
6. Remove from oven and drizzle lightly with honey, then sprinkle with chopped walnuts and herbs.
7. Serve warm or at room temperature.
Notes
For extra flavor, wrap each date in prosciutto before baking.
These can be prepared ahead and baked just before serving.
Perfect with a glass of white wine or sparkling prosecco.
