Description
Sweet dates stuffed with a creamy feta-parmesan blend, roasted until warm, and finished with a honey-walnut herb crunch. A luxurious yet simple appetizer perfect for holidays and parties.
Ingredients
20 Medjool dates, pitted
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
2 tbsp cream cheese (optional for extra creaminess)
1/4 tsp black pepper
1/4 cup chopped walnuts
2 tbsp honey
1 tbsp olive oil
1 tbsp chopped fresh rosemary or thyme
Pinch red pepper flakes (optional)
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
2. In a bowl, mix feta, Parmesan, cream cheese (if using), and black pepper.
3. Slice dates lengthwise and gently open. Stuff each date with 1–2 teaspoons of the cheese mixture.
4. Arrange stuffed dates on the baking sheet.
5. In a small bowl, combine walnuts, honey, olive oil, herbs, and red pepper flakes.
6. Spoon a little walnut-honey mixture on top of each stuffed date.
7. Roast for 8–10 minutes, until the cheese warms and walnuts are fragrant.
8. Serve warm with a final drizzle of honey if desired.
Notes
Use pistachios instead of walnuts for a bright, festive look.
Add lemon zest to the cheese mixture for extra brightness.
These can be assembled ahead and baked just before serving.
