Ingredients

  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup espresso, cooled
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Beat in the eggs one at a time, then stir in the cooled espresso.
  4. Combine the flour, baking soda, and salt in another bowl. Gradually add the dry mixture to the creamed mixture, stirring until just combined.
  5. Fold in the chocolate chips and nuts if you choose to include them.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about two inches apart.
  7. Bake for 9 to 11 minutes or until the edges are lightly golden.
  8. Let cool on the baking sheets for a few minutes before transferring the cookies to wire racks to cool completely.
