Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 cup spinach or kale

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery into the pot, and sauté until softened, about 5 minutes.
  3. Stir in the garlic and let cook for an additional minute.
  4. Pour in the vegetable broth and diced tomatoes, then add thyme, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat to simmer for about 15 minutes.
  6. Add in mixed vegetables and spinach or kale, and continue to simmer for another 5-10 minutes until tender.
  7. Adjust seasoning and serve hot.
