Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups mixed vegetables (e.g., green beans, peas, corn)
- 1 cup spinach or kale
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery into the pot, and sauté until softened, about 5 minutes.
- Stir in the garlic and let cook for an additional minute.
- Pour in the vegetable broth and diced tomatoes, then add thyme, basil, salt, and pepper. Bring to a boil.
- Reduce heat to simmer for about 15 minutes.
- Add in mixed vegetables and spinach or kale, and continue to simmer for another 5-10 minutes until tender.
- Adjust seasoning and serve hot.
Notes
Serve with crusty bread or atop a salad. Consider toppings like pesto or parmesan for added flavor.
