Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can corn, drained
  • 1 cup cooked rice or quinoa
  • 1 bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced red onion
  • 1 avocado, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine the cooked chicken, corn, rice or quinoa, bell pepper, black beans, and red onion.
  2. Add the chili powder, cumin, salt, and pepper. Mix well to combine.
  3. Divide the mixture into serving bowls.
  4. Top with diced avocado and fresh cilantro.
  5. Serve with lime wedges on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Can be enjoyed cold as a salad.
